Italian Trattoria in Dagobertshausen: NONNA opens on July 15, 2026

Marburg, July 13, 2026 – The VILA VITA Group is opening Trattoria NONNA at Hofgut Dagobertshausen on July 15, 2026. Around 80 seats, 40 in the restaurant and 40 in the bar, an Italian-inspired kitchen, special producers from Italy, an independent Aperitivo Bar, and a small market with selected gourmet products are intended to make the new house a lively meeting point for guests from Marburg and the region.

NONNA sees itself as a modern trattoria with a clear culinary stance. The focus is on great products, honest craftsmanship, uncomplicated hospitality, and that Italian dining culture where not individual courses, but the shared experience at the table counts. Pasta, pizza, salumi, wine, aperitivo, music, and small dishes for sharing shape the concept.

 

“With NONNA, we are creating a place at Hofgut Dagobertshausen that fits very well with the VILA VITA Group: quality-conscious, lively, approachable, and with a great sense of hospitality,” explains Michael Hamann, board member of VILA VITA Marburg. “We want to create a real trattoria feeling. A place where products have origin, craftsmanship becomes visible, and guests feel like they are sitting at their own Nonna's table.”

 

The menu features Italian classics and reinterpretations from various regions of Italy. These include antipasti, homemade pasta, risotto, fish and meat dishes, dolci, as well as specialties like Salumi Paradiso from Tuscan producer Le Selve di Vallolmo, Parmigiano Reggiano from Valserena, dishes with shaved truffle, and a unique NONNA Signature appetizer. This is prepared directly at the table and in front of the guests' eyes with over 30-year-old Aceto Balsamico from Giusti, Sardinian olive oil, pepper, and 36-month-aged Parmigiano Reggiano.

 

The pizza also plays a special role. Its dough combines Neapolitan tradition with the origin of Hofgut Dagobertshausen. The wheat grows on the estate's own fields and is milled at the Nispel mill in Gladenbach. The dough then matures for 48 hours, is hand-shaped, and baked at high heat. With San Marzano tomatoes, Mozzarella di Bufala Campana, selected olive oil, and ingredients from its own agriculture, the region, and selected partners, a pizza is created that rethinks Italian craftsmanship regionally.

 

The NONNA Bar is an independent part of the concept. Here, aperitivo culture, Italian bar classics, and unique drinks are at the forefront. The menu includes, among others, Nonnas Spritz with tangerine and basil, Limoncello Spritz, Negroni, Americano, non-alcoholic aperitivi, as well as liquid desserts like Espresso Martini and Tiramisù Martini. The bar is intended not only as a prelude to the trattoria visit but also to function as its own meeting point.

 

Of course, NONNA also focuses on Italy when it comes to wine. The menu includes Spumanti, Franciacorta, Italian white wines, rosati, and red wines from various regions. The offering is complemented by special producers like Il Borro from Tuscany, Pelissero from Piedmont, or Ruffino with the Chianti Fiasco, a historic bottle shape that is consciously revived at NONNA.

 

The concept also includes a small market under the name IL GUSTO. There, guests can find selected products, some of which are also used in the kitchen: olive oil, pasta, sauces, spices, Parmigiano, panettone, and chocolate truffles. Many products come from family-run manufactories in Italy, including Valserena, Accademia Olearia, Pasta Aldo, Pasta Gentile, Penna Bakery, Agricola Filippone, Il Bottaccio, and Tartufo Regale. This is intended to make NONNA a place for discovery and takeaway as well.

 

In the future, there are also plans for unique event formats. Under the name “La Serra della NONNA,” the trattoria is to become a stage for Italian evenings with an open kitchen, music, special products, and small kitchen moments four times a year. With “Amici della NONNA,” personal wine evenings for smaller groups are also planned, focusing on producers, special bottles, and sharing dishes.

 

Trattoria NONNA thus expands the culinary offerings of the VILA VITA Group in Dagobertshausen, complementing the estate with a restaurant that combines Italian culinary culture, regional agriculture, and selected product partnerships.
