Dagobertshausen Asparagus & Strawberries: The Tastiest Time of the Year Begins Now

Marburg, May 12, 2026 – Spring has long since arrived at the Dagobertshausen estate: The asparagus season is already in full swing, and the first strawberries are being freshly harvested. This marks the start of one of the most enjoyable times of the year around VILA VITA Marburg, with regional products, short distances, and lots of flavor straight from the field.

While fresh asparagus is harvested daily, the first aromatic varieties of the season are already ripening in the strawberry fields. Whether enjoyed pure, on cakes, as a dessert, or fresh from the sales stand, the strawberries are already bringing the taste of summer to Marburg.

Fresh from the Field: Strawberries with Character

Various strawberry varieties grow in the fields around the estate, consciously differing in taste, ripening time, and use. This creates a varied strawberry season with ever-new flavors over many weeks.

The season currently starts with early varieties like Rumba and Flair.
Rumba delights with bright red fruits, a sweet aroma, and a fine acidic note, perfect for direct snacking. Flair impresses with its pleasant sweetness and is particularly suitable for cakes or freezing. In June, aromatic classics like Sonsation, a variety with an intense flavor, ideal for jam or rum pot, and Verdi with large, shiny fruits and balanced sweetness – perfect for desserts and fresh consumption – follow.

"You can simply taste the difference when the fruits are harvested fully ripe and have not traveled long distances," explains Marc Lünsdorf, responsible for agriculture at the Dagobertshausen estate.

Asparagus from Dagobertshausen: Regional, Fresh, and Full of Flavor

Parallel to the strawberry season, the asparagus harvest is also underway. Dagobertshausen asparagus grows on the nutrient-rich clay soils around the estate, developing its particularly fine aroma and juicy texture.

Various varieties such as Raffaelo, Prius, Backlim, and Ramires are grown in the fields. Freshly harvested, the asparagus goes directly to the kitchens of the VILA VITA Marburg restaurants or to sales stands in the region.

In the restaurants, the spring vegetable is interpreted classically, creatively, and modernly, sometimes classically with hollandaise, sometimes surprisingly combined with international influences.
